At $45, Scrivener is more expensive than a lot of other word processors, but you get your money's worth. I was led to Scrivener by the team over at NaNoWriMo, but since I've started using it for everything I write.
There are tons of different project types, each with different set-up and templates specialized to your needs.
I love the ability to switch between the full-featured app for planning and editing and simplistic full-screen mode for pounding out the words. Being able to aggregate all of my sources within the app has been such a timesaver for essay writing, and the notecard view is killer for outlining.
The one downside of the app is that I have to compile to see my page count, but it's something I can easily overlook. After buying this, I hardly ever need to use Microsoft Word anymore.
